Propane works everywhere. Induction works better sometimes. Choosing wrong costs you time, money, and the occasional ruined dinner you didn’t have the ingredients to fix. I’ve cooked on both. Planned meals around both. Had enough honest conversations with people on the road to know this debate gets messy fast, mostly because people compare the two … Read more
The smell of bread baking is the one thing I missed most when I first moved into the van. Not a proper shower. Not a full-size chopping board. Not even a couch. It was bread. Fresh bread pulled from an oven, with that particular crust that only comes from steam and high heat and patience. … Read more
Most meal prep advice is written for households. Two people, minimum. Sometimes four. The recipes assume a full fridge, a full freezer, and someone else finishing the other half of that pasta bake. When you’re traveling solo in a van, none of that applies, and following that advice creates a different kind of problem: too … Read more
That’s the whole system. Not a strategy, not a framework. Just eight things you keep on hand and the fact that they combine in more ways than you’d expect when the nearest grocery stop is three days behind you. I’ve been cooking in vans long enough to know that pantry discipline is the difference between … Read more
The first time I tried to batch cook in the van, I spent a solid Sunday afternoon making five full dinners in one session. Chicken pasta, a dahl, a stew, an assembled grain salad, and a soup. Very proud of myself. Stacked the containers, wedged them into the fridge, done. Day one, great. Day two, … Read more
Some days, the driving goes on longer than it was supposed to, the spot you planned doesn’t work out, and by the time you’re parked up and the engine’s off, you’ve got nothing left. Not for a proper cook. Not for anything complicated. You’re hungry in that hollow, low-grade way that’s more exhaustion than actual … Read more
Something happened last spring, parked at a gravelled lay-by somewhere between Almería and Murcia. I’d stopped early to cook because the light was right and I was hungry, and I had a piece of pork shoulder in the cool box that had been sitting in its marinade since the night before. Corn tortillas, a small … Read more
Eight minutes is not a short amount of time. It’s a full song. It’s enough to drive a mile and a half on an empty road at dawn. And it’s well more than enough to make a proper breakfast in a van, provided you stop approaching the whole thing like you’re still standing in a … Read more
Somewhere on the outskirts of Naples, parked beside a dusty stone wall with the rear doors hanging open and a pot of chickpeas simmering on one burner, I realised I couldn’t remember the last time I’d actually missed having a fridge. It had been over two months at that point. The compressor had gone somewhere … Read more
Nobody warns you that the real problem isn’t finding something to cook in a van. It’s finding something that actually keeps you full. That gap hit me around week three of full-time van life. I’d eaten what felt like a proper dinner: pasta, olive oil, tinned tomatoes, a handful of spinach. Within 90 minutes I … Read more
